- Syrup sweets keep best sitting in their syrup — don't drain the box.
- Bring back to room temperature for twenty minutes before serving.
- No preservatives in anything we make. That is why the window is short.

The same four steps, every morning, for fifty years. No stage of it is faster than it was in 1974.
01Milk in before six
Split and drained the same morning it arrives.
02Kneaded by hand
Never machine-worked. Readiness is a feel, not a timer.
03Four hours to set
The step everybody else shortens. We do not.
04On the counter by nine
Driven out to all twelve counters twice a day.
